Aloo Karela (Potato & Bitter Gourd) Recipe Ingredients: 500 g Bitter Gourd (Karela) 3 Potatoes 2 Medium Onions 2 Medium Tomatoes 3–4 Green Chilies Salt to taste ½ tsp Crushed Coriander ½ tsp Cumin Seeds ½ tsp Crushed Red Chili Flakes 8–10 Small Whole Dried Red Chilies Oil as required Method: 1: First, wash the bitter gourds thoroughly, rub them with salt, and leave them for 1 hour to reduce their bitterness. 2: After 1 hour, rinse the bitter gourds, slice them, and lightly fry until they are slightly golden. Next, lightly sauté the bitter gourd peels for 2–3 minutes. 3: In the same pan, add the onions and cook until they become soft and lightly golden. 4: Then add the tomatoes and green chilies. Cook until the tomatoes become soft and mushy. 5: Now add the salt and potatoes. Mix well, cover, and cook over low heat for 7–8 minutes, or until the potatoes are tender. 6: Once the potatoes are cooked, add the crushed red chili flakes. 7:Now add the fried bitter gourds and mix everything well. Cook for a few minutes so the spices coat the vegetables evenly. 8: Finally, add the crushed coriander and cumin seeds. Cover and cook on low heat for 2 more minutes. 9: Garnish with fresh green chilies. Your delicious, flavorful Aloo Karela is ready to serve! Enjoy it hot with chapati or paratha.
