This risotto is so delicious, the taste of the mushrooms blends with the parmesan and the quality rice, just a feast on the plate. Some important points to know: Add the stock / water slowly and allow to cook slowly over medium-low heat so that the risotto absorbs the liquids slowly. Taste each time to check the degree of making of the rice, the texture should be "aldante", soft with a very slight degree of stiffness on the inside of the rice grain. This means that when making risotto, you should be in the kitchen and check its condition every few minutes. Cooking takes about 20 minutes. For the last 5 minutes I have partially covered the pot. Recipe for 2 servings: 1+ 2/3 cups vegetable stock or water 280 gram mushrooms (mix of portabello and champignon) 2.5 tablespoons dry white wine (not sweet) 1/2 cup rice for risotto (I used a variety called Carnaroli and is considered the highest quality) 1/2 red onion or 2 small shallots 2 tablespoons parmesan + a little more on the dish at the end. 1 tablespoon butter Salt and pepper to taste.
