Today, I made a really special cake that perfect for Christmas 🎄 Pavlova is a no-flour cake made of meringue. It's a very attractive cake with a thin, crispy outside and a soft marshmallow texture inside. Depending on your taste, you can enjoy with your favorite fruit (I prefer berries) and whipped cream. Mix eggs, sugar and lemon juice in a pot. Continue to stir over low heat until it thickens. (about 6-8 minutes) 2. Add room temperature butter little by little. Sift it and transfer it to a clean bowl. 3. Store in the refrigerator. (At least 2-4 hours before use) Please prepare ✔️ Preheat the oven to 135℃ (275℉). Draw a circle on the parchment paper. 1. Put egg whites and salt in a clean bowl and whip until soft peak forms. 2. Add in sugar one tablespoon at a time and whip on low speed, then turn up the speed and whip until stiff peak forms. (About for 5 minutes) 3. Add vinegar, vanilla extract, and sieved cornstarch, fold gently and mix. 4. Mound the meringue into the circle on the parchment paper. Use a spatula to create the design in the meringue. 5. Bake in an oven preheated to 135 degrees for 60 minutes, then lower the temperature to 120 degrees and bake for another 45 minutes. (Turn off the oven and let it cool in the oven for 30 minutes before taking it out) 6. Prepare filling. Add powdered sugar to the whipping cream and whip until stiff peak forms. Add all the lemon curd to half of the whipped cream and mix. Transfer to a piping bag and store in the refrigerator. 7. Transfer completely cooled pavlova to the plate.
