For Yakhni (Stock): Mutton Mix Boti (ribs, shoulder, shank) Water — 6 glass Whole black pepper — 1 tbsp Cinnamon stick — 1 Cloves — 5-6 corriander-1tbsp Garlic — 1 whole head Onion full — 2 large Salt — 2 tsp Basmati rice (soaked 30 min) — 2 glass Desi ghee — ½ cup Oil — ¼ cup Onions thinly sliced — 2 medium Yogurt — 2tbsp Ginger garlic paste — 2 tbsp Green chilies whole — 4-5 tomatoes - half red chilli - 1tsp Salt — to taste METHOD Put mutton with all yakhni spices, ginger, garlic, onion, salt and 2 liters water in a pot. Boil, skim foam, then simmer covered for 45-55 minutes. Strain stock. Keep meat separate. Heat ghee + oil in a big pot. Fry sliced onions until deep golden brown. Take 12-15 minutes. Don't rush. Add ginger garlic paste. Fry 2 minutes. Add yogurt and cook until oil separates. Add cooked mutton and mix well. Measure yakhni — 1.5 to 1.75 cups per cup of rice. Pour into pot. Add green chilies. Boil hard and taste salt. It should be slightly salty. Drain soaked rice and add to boiling yakhni. Stir once. Cook uncovered on high heat until water is 90% absorbed (8-10 minutes). Add mint and coriander on top. Drizzle kewra water. Cover tightly. Put pot on a tawa on lowest heat. Dum for 15-18 minutes. Do NOT open. Turn off flame. Rest 5 minutes. Open and fluff rice from bottom. Serve with raita, salad and achaar. SECRET TIPS Always use mix boti — ribs, shoulder and shank together. Different bones make the yakhni deep and rich. Add rice only when yakhni is on a hard boil. Slow boil makes rice mushy. Use desi ghee. This is what makes it "bohat alla." Dum step is must.
