The consistency comes from the cold fat and the friction between the hands. The proportion used here is 50% fat to flour, which helps to make the dough light, crumbly, and with that texture that crumbles and melts in your mouth. 🧠 What can affect the consistency of the dough: ✔️ Flour: prefer all-purpose flour, without yeast. Very strong flours can make it difficult to achieve the delicate texture of the shortcrust pastry. ✔️ Fat: Use margarine with at least 80% lipids. Margarines with too much water can alter the consistency of the dough. ✔️ Technique: The fat needs to be cold. Mix the flour, salt, and margarine until it forms a moist crumbly mixture, then bring the dough together by rubbing it with your hands, without kneading. ✔️ Environment: A very hot kitchen can soften the fat too much. If necessary, chill the dough before rolling it out. ⚠️ Avoid kneading like bread dough.
