In a separate bowl combine: 1/2 cup softened coconut oil 1/2 cup melted honey 4 tsp. vanilla extract Stir to combine the wet ingredients Add wet ingredients to dry and mix well. Chill 30 min while you preheat oven to 350 F. Drop spoonfuls of batter on a cookie sheet. I like to use parchment paper. Bake 8-10 minutes or until slightly brown. Let cool 5 minutes, then transfer to a cooling rack. Enjoy!
