Noodle Recipe (for 2 servings) Ingredients: 2 servings of wet noodles, half-cooked 50 gr boiled chicken, shredded 50 gr kekian, cut 2 eggs 5 cabbage leaves, sliced 1 tomato, cut 5 green mustard greens, cut 5 cayenne peppers, sliced ½ tbsp sugar ½ tsp salt ½ tsp pepper Flavoring Fine seasoning: 3 shallots 2 cloves garlic 1 candlenut 3 gr shrimp paste 20 ml oil Broth: 700 ml hot water 3 blocks chicken stock Pickles: 1-2 cucumbers, remove seeds and cut 5 cayenne peppers 2 tbsp sugar 2 tbsp rice vinegar / 1 tbsp table vinegar ½ tsp salt Complement: Fried shallots Steps: 1. Blend all the fine seasoning ingredients, set aside 2. Heat the oil then scramble the eggs until dry, set aside 3. Use a pan that same, saute the ground spices until dry and fragrant then add the shredded chicken and kekian, stir then add the tomatoes, cayenne pepper, and broth then cook until boiling 4. Add the scrambled eggs and season with sugar, salt, and pepper cook again until boiling 5. Add the half-cooked noodles, cabbage, and green mustard greens, cook briefly then turn off the heat 6. For the pickles, mix the sugar, salt, and vinegar then stir until dissolved then add the cucumber and boiled cayenne pepper then stir again until evenly distributed 7. Blend all the spices. Set aside. 2. Heat some oi. Fry the eggs until crispy. Set aside. 3. In the same pan, sauté the blended spices until reduced and fragrant. Add the shredded chicken and kekian. Stir and add the tomatoes, bird's eye chili, and chicken stock. Bring to a boil. 4. Add the scrambled eggs and season with sugar, salt, and pepper. Bring to a boil once more. 5. Add the parboiled noodles, cabbage, and choy sum. Cook for a moment and turn the heat off. 6. For the pickles, combine the sugar, salt, and vinegar. Stir until they're dissolved and add the cucumber and boiled bird's eye chili. Mix well. 7. Transfer to a serving plate, top with pickles and fried shallots. 8.
