Porchetta – smoked pork belly. Super juicy, and you get that Italian holiday feeling for free ;-) As with all my recipes, I made sure to use no industrially produced ingredients. So, free from preservatives, sugar, E-numbers, and artificial flavorings. My recipe suggestion for you: 1 pork belly, approx. 3.5 to 4.5 kg Spices (per kilogram): 15 g sea salt 4 g fresh garlic 1 g hot paprika 1 g sweet paprika 1 g raw cane sugar 0.5 g crumbled marjoram 1/2 chili pepper 2 to 3 spring onions Fresh and to taste: rosemary, chervil, oregano, lovage, thyme, bay leaf, sage Zest of one organic lemon Olive oil Once you have everything ready and want to cook the pork belly roulade in water, I recommend vacuum-sealing it.
