Heat the milk over medium heat until it just begins to simmer (don’t let it boil). 2. Remove from the heat and slowly stir in the lemon juice. 3. Let it sit for 5–10 minutes until the curds separate from the whey. 4. Pour through a cheesecloth or fine-mesh strainer. 5. Gently rinse the curds with cold water if you prefer a milder flavour. 6.
