Today I'm sharing one of my favorite easy dinner recipes ... Street Corn Taco Bowls! This recipe is packed with seasoned ground beef, crispy roasted potatoes, creamy Mexican-style street corn, with Cotija cheese for the perfect combination of flavors. For filming purposes, I plated everything instead of serving it in a bowl so you can get a better look at all of the delicious layers! Ingredients Used: • 1 pound ground beef • 1 packet taco seasoning • 1 (3-pound) bag yellow mini potatoes • Olive oil - (added a little to pan to cook ground beef) • 2 garlic cloves, minced • 1 (15-ounce) can corn, drained • 1 (16-ounce) package cottage cheese, blended until smooth • 1/2 cup Cotija cheese • 1 lime (juice and zest) • Green onions (mixed into the street corn mixture and more for garnish) • 2 teaspoons chili powder • 1/2 teaspoon salt • Garlic powder - (seasoning for the potatoes) • Onion powder - (seasoning for the potatoes) • Traeger Steak Rub Seasoning (contains pepper, salt, garlic, and butter - seasoning for the potatoes) These Street Corn Taco Bowls are loaded with flavor and are perfect for an easy weeknight dinner or meal prep. The combination of seasoned taco beef, roasted potatoes, creamy street corn, fresh lime, Cotija cheese, and green onions makes every bite absolutely delicious!
