Bake Half, Freeze Half: Citrus Sugar Blueberry Scones
Today we’re using the homemade citrus sugar and homemade extract we made here on the farm to make citrus sugar blueberry scones. This is one of my favorite kinds of recipes because it does more than give us breakfast today. We’re baking half now and freezing half for busy mornings, houseguests, and those homestead days when breakfast needs to already be halfway done. These scones are made with a small amount of homemade citrus sugar, regular granulated sugar, dried blueberries, homemade vanilla extract, cream, and cold butter. The citrus sugar is made from our homemade citrus powders, so it is strong enough that I do not use it as a full sugar replacement. Instead, I use it as a flavor-building ingredient so the scones taste bright and bakery-style without becoming bitter or overpowering. This recipe also fits beautifully into the way I like to keep a working homestead kitchen: make something once, enjoy part of it now, and tuck part of it away for later. The unbaked scones freeze beautifully and can be baked straight from the freezer whenever you want a homemade breakfast treat without starting from scratch.
