Pineapple Casserole: A Classic Sweet & Savory Southern Side Dish-Steph’s Stove

Pineapple Casserole 2- 20 oz cans of pineapple tidbits or chunks (drained and reserve 6 tablespoons juice) ⅓ cup sugar 5 tablespoons all-purpose flour 1 cup freshly shredded cheese (cheddar or colby jack work best) ¼ cup melted butter 1 sleeve Ritz crackers - crushed (or comparable buttery cracker) Preheat the oven to 350 degrees. In a mixing bowl combine sugar, flour, and reserved juice. Mix well to combine.Add pineapple and toss to coat all ingredients. Pour into an 8x8 casserole dish, top with cheese, and set aside. Melt butter and add crushed crackers. Toss gently to coat all crackers or until butter is absorbed into the crackers. Place crackers over top of cheese and bake for 30 minutes or until golden and bubble.
