Here’s what you will need - Chicken thighs (more flavour) or chicken breast Green, Yellow and Red Bell Peppers Onions Ginger paste Coriander paste Garlic paste Yogurt or Curd Turmeric powder Chilli powder Tandoori Chicken masala blend Coriander powder Lemon Pepper Salt Olive oil or veg oil Simple everyday ingredients, but bold in flavour. Kiss your bland roast chicken goodbye! Here’s how we put this together - In a large bowl combine your oil, spices, yogurt, and lemon into a smooth marinade. Cut up your onions and separate the layers one by one. Makes it easy to skewer. Cut up your chicken thighs into medium chunks. Same with the peppers! Combine chicken and marinate, let it rest for at least 5–6 hours. Overnight works best! Now we skewer - Chicken + piece of pepper + onion. The order is not relevant, make sure there is a good balance between the veg and meat! Go crazy! Fire up your chimney and let them coals sizzle. Once they are red-hot, add them to your grill! Place your skewers on the hot coals. You must hear them sizzle right away, if not your coals aren’t ready! Grill em to a nice medium char, keep moving your skewers for an even cook. Mop your skewers with some butter for the extra kick and some shine! And we are done! Serve it with some pita and hummus. You could serve it with anything you like!
