Place the mountain cheese in the mixing bowl, chop for 5 seconds/speed 6, and transfer to a bowl. Rinse the mixing bowl. Place the onion and garlic in the mixing bowl, chop for 3 seconds/speed 5, and scrape down the sides with the spatula. Add the oil and sauté for 4 minutes/Varoma/speed 1. Add the mushrooms and leeks and sauté for 7 minutes/Varoma/reverse/gentle stirring. During this time, place the Maultaschen in a 20 x 30 cm casserole dish. Add the milk, egg, peas, shredded cheese, spice paste, vinegar, salt, pepper, and nutmeg to the mixing bowl, mix for 10 seconds/reverse/speed 3, toss in the casserole dish with the Maultaschen, and bake for 30-40 minutes at 180°C/350°F.
