If you enjoy restaurant-style recipes made at home, do let me know in the comments! 🍀INGREDIENTS : 🥣Prawns: 500 grams 🥣Raw Mango: 1 large 🥣Thick Coconut Milk : 1 cup 🥣Thin Coconut Milk : 2 cups 🥣Shallots: 10–12 🥣Ginger: 1 large piece 🥣Garlic: 4–5 cloves 🥣Green chilies: 4–5 🥣Curry leaves: 2 sprigs 🥣Red chili powder: 1.5 tbsp 🥣Coriander powder: 1 tbsp 🥣Turmeric powder: 1/2 tsp 🥣Salt: As required 🥣Coconut oil: As required 🥣Heat coconut oil in a clay pot or pan. Sauté shallots, ginger, garlic, green chilies, and curry leaves until the raw smell disappears. 🥣Lower the heat and add turmeric powder, chili powder, and coriander powder. Roast until fragrant. 🥣Add chopped tomatoes and sauté until they soften and mash well. 🥣Add the raw mango and prawns. Cover and cook on low heat for 5 minutes. 🥣Pour in the second extract of coconut milk. Add salt to taste, cover, and cook on medium heat for 8–10 minutes until the prawns and mangoes are tender. 🥣Once the curry thickens, reduce the heat to a minimum. Pour in the first extract (thick coconut milk). Heat gently without letting it boil, then turn off the flame. 🥣For the tempering, heat coconut oil in a small pan, splutter mustard seeds, and sauté dried red chilies, curry leaves, and sliced shallots. Pour this over the curry. 🍀Adjust the mango quantity based on its tartness.
