Italian Cream Cake – Help at Home Jim This is a deliciously rich and tasty dessert cake. This coveted family recipe was handed down by a coworker of my dad about fifty years ago. It makes a great birthday or celebration cake for any occasion or just to celebrate life. ITALIAN CREAM CAKE BY: Florene Curry 1 cup buttermilk 1 tsp. soda 5 eggs, separated 2 cups sugar 1 stick margarine 1/2 cup shortening 2 cups flour 1 tsp vanilla. 1 cup chopped nuts 2 small cans coconut (2 cups Sweetened Flake Coconut) Combine soda and buttermilk and let stand a few minutes. Beat egg whites till stiff. Cream sugar, margarine and shortening. Add egg yolks one at a time, beating after each. Add buttermilk alternating with flour to creamed mixture. Stir in vanilla. Fold in egg whites. Gently stir in nuts and coconut. Bake in 3 - 9 in inch greased and floured pans at 325 degrees for 25 minutes. CREAM CHEESE ICING 8 oz pkg. cream cheese softened 1 stick margarine 1 tsp. vanilla 1 one-pound powdered sugar (about 3 3/4 cups) Cream cheese and margarine well and add vanilla. Beat in sugar a little at a time until of spreading consistency.
