Instant Pot Stuffed Peppers! Quick, easy and delicious recipe! Cook with me! I found this recipe on Pinterest and I'd rate it a 9/10! Only thing I would do differently next time is add some red sauce/tomato sauce to the mixture! It was very flavorful, had a good kick to it, but definitely felt like it was missing something. I added some marinara sauce to it, and it was AMAZING! It also said to cook for 10 minutes, but for me the ground beef was not ready in ten minutes. I'll probably do about 12-13 minutes next time! I will link the actual Pinterest recipe below, but in case you want a quick breakdown of the recipe: Ingredients: -4 large bell peppers (any color you like) -1 pound ground meat (I did lean ground beef) -1 tablespoon chili powder -1 teaspoon ground cumin -1 teaspoon garlic powder -1 teaspoon onion powder -1/2 teaspoon salt -1/4 teaspoon black pepper -1/4 teaspoon cayenne pepper if you want it extra spicy (I did not add cayenne pepper) -1 10 ounce can diced tomatoes and green chiles, such as Rotel (in the juice) -1 4 ounce can green chiles (in the juice) -1 1/2 cups cooked brown rice -1 1/4 cup shredded cheese -Cilantro for topping (they grocery store didn't have cilantro when I went, so I used parsley) Instructions: 1. Place trivet in your instant pot (1 cup for 6 quart model, 1 1/2 cups for 8 quart model). 2. Cut off tops of peppers and remove seeds and membranes. 3. Stand the peppers up in the instant pot, making sure they stay upright.  4. In a mixing bowl, combine ground meat, chili powder, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper if you choose to use it. 5. Pour in diced tomatoes and green chiles. 6. Add the rice and 3/4 cups of cheese... Doing it in this order makes them easier to combine). 7. With a fork, gently stir all the ingredients together as evenly as possible.  8. With a spoon, fill each pepper to the top, evenly dividing the mixture between the peppers. 9. Close and seal the instant pot. Cook on high (manual pressure) for about 10-13 minutes... the recipe I used says 10 minutes, but I'd say do 12-13... You can check with a thermometer, you want the meat to read at least 165 degrees. Once the time has elapsed, immediately release the pressure. 10. Open the instant pot, sprinkle the remaining 1/2 cup of cheese evenly on each pepper, place the lid back on for a minute (no need to seal) to allow the cheese to melt. 11. Lift the peppers with tongs & enjoy! Some water may drip as you lift, this is normal, just moisture that builds as the peppers cook!)
