For your dressing, add 6 tablespoons of extra virgin olive oil, squeeze one lemon and add in a pinch of salt and then mix that together. Drizzle the dressing all over the bread and toss a little so the bread absorbs it all. Chop two spring onions and add them into the bowl along with the peas and artichokes. Break the leaves of the baby gem lettuce and add those into the bowl and toss everything together. Finally, finish off the salad by adding a handful of basil leaves.
