Tasting Homebrewed Cellar Aged Imperial Stouts - Brew Dudes

For the final video of 2020, John and Mike dig into their cellared beer to taste and compare two Imperial Stouts. These are both beers we covered in earlier videos, tasting the beers when they were fresh. Now it's been almost 3 years for these beers and we decided to dig them out and see how they are standing up to the test of time. John's bottle conditioned beer seems to still have tons of noce chocolate tones with some notes of dark fruit. The initial clean fermentation character is still holding up well. There is no alcohol 'burn' or heat. Most of the hop character has faded but there is plenty of bitterness still in the beer to balance the fruit flavors. Maybe a hint of pleasant oxidation. Mike's beer was originally bottled hastily from a keg. The carbonation was al little lacking; more cask like at this point. There was a noticeable ethanol flavor that was somewhat sweet. No solvent flavors though. The roast character was pretty strong still. Maybe some additional age will mellow it out. Thanks for hanging with us through 2020.
