🌟 We're back with another amazing recipe! šŸ½ļøāœØ Today, we’re going to learn how to make Homemade GruyĆØre Cheese from Scratch (Aged 7 Months) step by step! šŸŽ‰ This is a completely natural, additive-free, and healthy recipe you can easily prepare at home to bring extra flavor to your table. šŸ”šŸ’š šŸ“Œ In this video, you’ll learn: āœ… How to make traditional GruyĆØre-style cheese using raw milk and natural calf rennet āœ… The full process of cutting, cooking, pressing, brining, and aging your own cheese āœ… What to expect during aging, and how to achieve a rich, beautifully shaped, balanced cheese šŸ„„ Recipe: šŸ§‚ Ingredients: 1ļøāƒ£ 20 liters of raw milk 2ļøāƒ£ 1 glass of natural calf rennet (şirden mayası) 3ļøāƒ£ 900g ground rock salt (for brine) 4ļøāƒ£ 3 liters of water (for brine) 5ļøāƒ£ Additional salt (for dry-salting) 6ļøāƒ£ Cheesecloths and cheese molds (or DIY alternatives) āœ… Step-by-Step Instructions: 1. Strain & Warm the Milk šŸ‘‰ Strain 20L raw milk through a cheesecloth and heat it to 34°C. In winter, aim for the higher end of the 32–37°C range. 2. Add Rennet & Ferment šŸ‘‰ Add 1 glass of rennet, mix well, cover, and let it ferment for 1 hour (or 40 min in summer). When ready, the curd should jiggle like jelly. 3. Cut & Break the Curd šŸ‘‰ Cut the curd into small cubes, then break them down into rice-sized grains. 4. Cook the Curd šŸ‘‰ Scoop out some whey to ease stirring. Slowly heat the curds to 60°C, stirring gently. They're ready when they feel like lentil meatballs when squeezed. 5. Drain the Curds šŸ‘‰ Remove the remaining whey and place the curds into cheesecloth. Gently press by hand and place into molds (you can use cake molds + metal strainers as alternatives). 6. Shape & Press šŸ‘‰ Shape into a wheel while still warm. Flip after 30 minutes, then every 2–3 hours for the first 24 hours. Use weights (like paving stones) for even pressing. 7. Dry-Salt the Cheese šŸ‘‰ Unmold and dry-salt for 4–5 days, flipping and wiping frequently. If the cheese bulges, pierce the bottom with a skewer. Keep it covered with a salted, damp cheesecloth to prevent cracking. 8. Brine Stage šŸ‘‰ Make a 30% salt brine by dissolving 900g rock salt in 3L water. Submerge the cheese, weigh it down with a plate, and refrigerate for 15 days. 9. Final Dry-Aging šŸ‘‰ Transfer to a warm, humid space (30–32°C, ~90% humidity). Dry-age for 10–15 days, salting every 5 days. It will start to sweat and soften—this is normal. 10.
