On the hottest afternoon in July, my grandmother kept the morning's milk sweet in a stone trough of spring water that never rose above fifty degrees. No wire. No compressor. No bill. Just the cold of the earth and running water. For two hundred years my family has milked cows and kept milk and put butter by for winter with no refrigerator anywhere on the farm.
