Authentic Thalassery Chicken Biryani by Priya ✨ Today, Priya takes you through her delicious homemade Thalassery Chicken Biryani recipe, a flavour-packed Kerala delicacy made with fragrant Kaima rice, tender chicken, aromatic spices, and rich coconut milk. Follow along and recreate this restaurant-style biryani in your own kitchen! 📝 Ingredients For the Rice Kaima Rice Ghee Cinnamon Cloves Cardamom Bay Leaves Coconut Milk Water For the Chicken Masala Chicken Onions Ginger Garlic Green Chillies Oil Mint Leaves Coriander Leaves Tomatoes Coriander Powder Turmeric Powder Salt Roasted Garam Masala Cinnamon Cloves Cardamom Fennel Seeds Peppercorns For Garnishing Caramelised Onions Cashews Sultanas (Raisins) 👩🍳 Method Step 1 – Prepare the Rice Heat ghee in a pot and add the whole spices (cinnamon, cloves, cardamom, and bay leaves). Add the washed Kaima rice, coconut milk, and water. Cook until the rice is about 70% done, then drain and keep aside. Step 2 – Make the Chicken Masala Heat oil in a pan and sauté the onions until softened. Add crushed ginger, garlic, and green chillies, then add the chicken pieces. Mix in coriander powder, turmeric powder, and the freshly roasted garam masala powder. Add chopped mint leaves, coriander leaves, tomatoes, and salt. Cook until the chicken is tender and the gravy thickens. Step 3 – Layer & Dum Layer the partially cooked rice over the chicken masala. Garnish with caramelised onions, cashews, and sultanas. Cover tightly and cook on low heat (dum) until the flavours meld together beautifully.
