Nut/Seed/Fruit Bars - a perfect snack for hiking, travel, lunch boxes - like Buc-ee’s Nutty Bites
Nut/Seed/Fruit Bars 2 cups pecan pieces 3 cups cashews 1 cup pumpkin seeds 1 cup pistachios 1 cup almonds 1/2 cup sunflower seeds 1 1/2 cup dried blueberries 1 cup Craisins 1 1/2 cups honey 3/4 cup light corn syrup 2 teaspoons Kosher Salt 2 teaspoons vanilla Combine the first eight ingredients in a large bowl. Set aside. Line a 12“ x 17“ x 1“ sheet pan with parchment paper. Set aside.  In a large pan, over high heat, bring the honey and corn syrup to a full rolling boil and cook until it reaches 260°. This is the “hard ball stage”. Remove from the heat and stir in the Kosher Salt and vanilla. Immediately pour this mixture over your nut, seed, fruit mixture and quickly stir to coat everything evenly.  Dump this mixture onto your parchment paper lined pan and, using dampened hands, press the mixture into an even layer, covering the entire pan. Allow to sit until it is completely cooled. Using a large knife or bench scraper, cut into bars or small bites. Store in a covered container with parchment paper between each layer.
