Lemon and Red Fruit Cake Lemon Sponge Cake 200g Soft Butter (at room temperature) 110g American Cheese 340g White Sugar 4 Eggs 1 tsp Vanilla Essence 1 Lemon Zest and Juice 250g All-Purpose Flour 1 tsp Baking Powder 1 tsp Salt Place the soft butter in a bowl. Add the cheese. Beat until combined. Add the sugar. Beat until creamy. Add the eggs, vanilla essence, lemon zest, and juice, beating after each addition. Add the dry ingredients: sifted flour and baking powder, plus the salt. Mix with a rubber spatula without overbeating. Place in four 20cm diameter molds. Bake for 12-15 minutes in a preheated oven at 175°C. Red Berry Compote 300g fresh or frozen berries 50g sugar 2 tbsp starch 5 tbsp cold water Cook the raspberries for 5 minutes over low heat, stirring constantly to prevent burning. Add the sugar. Cook for 8 minutes. Dissolve the starch in the cold water in a bowl. Stir in. Cook for 5 minutes, stirring constantly over low heat. Set aside. Lemon Cream You can watch the video on how to make the lemon cream at: • Crema de limón 2 Lemons: zest + juice 240g sugar 4 eggs 300g butter Place the lemon zest and juice in a saucepan. Add the sugar and eggs. Mix well with a wire whisk before placing on the heat. Cook until the mixture has thickened. Cool in an inverted double boiler. Add the butter. Mix well. Blend for a smoother texture. Chill for at least 8 hours before using. Can be made the day before. Lemon Mousse 800g Lemon Cream (the amount is approximate. Corresponds to the previous recipe) 400g Heavy Cream Whip the cream to a medium peak. Add the lemon cream. Place in a piping bag fitted with a tip. Assembly Place a disc of lemon sponge cake on a board. Cover with the berry compote. Fill with the lemon mousse. Repeat until complete. Chill. Decorate with the remaining mousse. Garnish with fresh fruit.
