First Batches in the Harvest Right Freeze Dryer

In this week’s episode of Our Stoney Creek Journey, we try out our new Harvest Right freeze dryer for the very first time and start processing some of the excess fruit from the farm. After growing, picking and preparing fruit on Stoney Creek Farm, it feels great to have another way to preserve the harvest and reduce waste. These first batches are all about learning the process, seeing how the fruit turns out, and working out how freeze drying might become part of our farm life going forward. Freeze-dried fruit is light, crunchy and full of flavour, and it’s a fantastic way to turn seasonal produce into something that can be stored, shared and enjoyed later. Freeze drying removes moisture from frozen food under vacuum, helping preserve flavour and texture in a very different way to normal dehydrating. This is only the beginning, but we’re excited to see where this new addition takes us, especially with more fruit, garden produce and farm harvests to come.
