Whether you're a beginner or an experienced baker, this step-by-step recipe will help you create a stunning bakery-style cake at home. ✨ Perfect for: ✔ Holiday desserts ✔ Birthday cakes ✔ Family celebrations ✔ Chocolate lovers ✔ Weekend baking INGREDIENTS: ✅ Sponge cake: 1¾ cups (230 g) all-purpose flour. ¾ cup (65 g) cocoa powder. 1⅓ cups + 1 tbsp (280 g) sugar. 1 tsp salt. 2 large eggs. 1 cup + 1 tbsp (260 ml) milk. ¼ cup (60 g) neutral vegetable oil. 2 tsp (10 g) baking powder. 2 tsp (10 g) vanilla sugar. ¼ cup (60 g) butter. Mix with a whisk or mixer until smooth. Grease an 8-inch (20–21 cm) baking pan with butter. Bake in a preheated oven at 320°F (160°C) for 60–70 minutes. Let cool to room temperature (you can wrap it in plastic wrap). Carefully cut off the top layer. Crumble the trimmed top layer into fine cake crumbs. Cut the cake into 3–4 equal layers. ⸻ ✅ Vanilla cream: 2 eggs. ¾ cup (150 g) sugar. 2 tbsp (20 g) vanilla sugar. ¼ cup (60 g) cornstarch. 2 cups + 2 tbsp (500 ml) milk. Mix until smooth. Cook over medium heat, stirring constantly. Cook until thickened. Cover with plastic wrap. Let cool to room temperature. You can place the bowl in cold water to speed up cooling. ⅔ cup (160 g) butter, room temperature. Beat for 3–5 minutes until light and fluffy. Gradually add the cooled custard, mixing until smooth. ⸻ ✅ Assembling the cake: Spread the cream evenly between each cake layer. Refrigerate for several hours. ⸻ ✅ Ganache: 3½ oz (100 g) dark chocolate. ⅓ cup + 1 tbsp (100 g) hot heavy cream (33–36% fat). Melt in the microwave or over a double boiler and stir until smooth. Coat the cake with the ganache. Sprinkle the sides of the cake with the prepared crumbs. Decorate as desired.
