SMALLCHOPS SERIES : 101 SPRING ROLLS and 106 SAMOSA MAKING | Smallchops Batter Mix

Hey People! So here's the part 2 of my #smallchops making video - the batter mixing (wet ingredients mix). From the mixing of the batter to just the perfect way to fold your springrolls and samosas! ...... Listed below are ingredients used in preparing my Smallchops batter mix 👇 📍Smallchops Jacket Mix (see previous video for recipe) 📍16 tbsp of Vegetable oil (192ml) 📍16 cups of Water (6,528ml) ...... NOTE 👇 ⭐ TBSP means tablespoons. The tablespoons used here are your regular eating spoon for an adult. ⭐ We have different flour brands in the market and they absolve water differently due to their different protein/gluten level. So when adding water, add 14 cups first and mix well before adding the other 2 cups gradually till you get the desired batter consistency shown in the video ⭐ Allow smallchops batter mix to rest for at least 30 minutes before using. ⭐ If working outside like I did cover your already prepared jackets with a clean slightly damp kitchen towel. This helps the jacket retain moisture and keeps it from drying out. ⭐ If working in your kitchen cover jacket with dry kitchen napkin ⭐ Remember to flour in between your jackets when stacking them on themselves to prevent them from sticking. Also dust your work surface with flour when working. ⭐ To store unfried Samosa and Springroll for later, place them in a ziplock bag; making sure there are air spaces in it and freeze. This freezes well in the ziplock bags compared to in a plastic airtight container. ⭐ To fry frozen samosaa and springroll, do not allow them to thaw (do not allow them come to room temperature). Fry them in already hot deep oil while frozen. If you allow them come to room temperature, they will scatter in the oil. ⭐ Make sure your oil's hot before frying so that your smallchops doesn't soak in oil .......
