A big hug, César Ingredients: 2 small onions 1 medium bell pepper 1 carrot 1 tomato 3 medium potatoes 250g beef shoulder 1 chorizo sausage 200g bow-tie pasta Seasonings: Salt, Paprika, Chili powder, Oregano, Bay leaf, Cumin. Optional: 1 beef bouillon cube. Why is it called "Carrero Stew"? The term "carrero stew" comes from the old wagoners, who were responsible for transporting goods over long distances in carts. During these trips, they needed meals that were easy to prepare, hearty, and could be cooked with the few ingredients available on the road. Carrero stew is a simple stew made with basic, accessible ingredients. Its simplicity and adaptability allowed the wagoners to cook it easily while traveling.
