Hidden inside the bustle of Ghim Moh Market is a stall that has quietly preserved a craft since 1977 — Thye Hong Handmade Fishball Noodle, run by 74‑year‑old Uncle Wee Phong Sai, one of the last few still making fishballs and fishcakes entirely by hand. Before the sun rises, Uncle Wee begins his routine at 1 a.m., turning fresh yellowtail into springy fishballs, palm‑sized fishcakes, and that unmistakable broth with natural sweetness. His pork lard and sambal chilli are also cooked in‑house — the kind of old‑school flavour you can’t replicate from a factory. This humble stall traces its roots back to 1973, when it operated as a pushcart outside the iconic Thye Hong biscuit factory at Alexandra Road — yes, the same brand behind the beloved Marie Cream Crackers. When Ghim Moh Market opened in 1977, the stall moved in and has stayed ever since. Today, the queue never stops.
