After living in Japan for over a year, we felt like eating our favorite sushi: Brazilian! 😅 Since it's not easy to find here, we decided to try our hand at cooking to satisfy our craving. Recipe for sunomono (sweet and sour pickled cucumber) INGREDIENTS -Approximately 500g of Japanese cucumber -130ml of rice vinegar -4 tablespoons of sugar -1 teaspoon of salt -toasted/white sesame seeds PREPARATION METHOD Wash the cucumbers well and slice them, keeping the skin on, using a vegetable slicer (mandolin). Add the salt, mix and let sit in a colander for at least 10 minutes. In a pan, heat the rice vinegar and sugar until the sugar dissolves completely. Let cool. Quickly wash the cucumber to remove excess salt and drain. Then, place the cucumber in a container, pour the vinegar and sugar mixture over it. Sprinkle with sesame seeds and store in the refrigerator, covered, for at least 30 minutes before consuming.
