Now here’s a chef’s tip – for the smoothest texture, run the still-warm potatoes through a potato ricer or a meat grinder. Warm potatoes are much easier to process; cold ones straight from the fridge turn stiff and hard to mash. Once mashed, let the potatoes cool slightly, then divide the mound into four equal parts. Take one quarter out and fill that empty space with all-purpose flour – just enough to even it out with the rest of the potato mass. This is an old-school trick from the days before kitchen scales. Important: the water should be hot but not at a rolling boil – otherwise, the kopytka can fall apart. Once they float to the surface, give them another 40 seconds, then scoop them out and transfer them to a bowl of cold water. This stops the cooking process and firms them up. When they sink to the bottom, they’re ready to go – move them to a serving dish or plate. And there you have it – freshly made kopytka, ready to eat! You can serve them in all sorts of ways: with a meat stew, a dollop of sour cream or yogurt, or as a side dish.
