Chicken Francese
Recipe: Cutlets- 6 chicken cutlets 1 cup flour (seasoned with salt and pepper) 2 eggs (scrambled) 2 tbs EVOO 1 tbs butter Sauce- 2 tbs butter 3 tbs flour 2 cloves garlic (sliced) 1 cup white wine 2 cups chicken stock 1/2 lemon juice 6 lemon slices Salt and pepper to taste Garnish- Parsley (chopped) Preheat oven to 350. Bring a large pan the medium high heat and add 2 tbs EVOO and 1 Tbs butter. Dredge chicken through flour and egg then brown both sides working in batches. Over medium low heat melt 2 Tbs butter, sauté the garlic and stir in flour. Add wine and stock and whisk till smooth. Add lemon juice,season with salt and pepper. Add the chicken back to the sauce, top each piece with a slice of lemon and place in oven to bake for 10 minutes. Remove from oven. Place pieces of chicken on a platter, too with sauce and sprinkle over chopped parsley.
