INSIDE KUALA LUMPUR'S FOOD CULTURE - MALAYSIA

Kuala Lumpur is Malaysia’s capital, where Malay, Chinese and Indian influences come together to create one of the country’s most recognizable food cultures. This episode explores some of the classic meals that have become part of the city’s identity, from long-running local institutions to neighborhood favorites. The journey begins in Kampung Baru with nasi lemak, Malaysia’s national dish. Fragrant coconut rice is served with sambal, beef lung, sambal sotong, fried anchovies, peanuts and egg, bringing together some of the country’s most recognizable flavors on a single plate. Next is banana leaf rice, a South Indian meal served on a fresh banana leaf with rice, curries, vegetables and papadum, traditionally eaten by hand. From there, it’s charcoal-fired claypot chicken rice. Cooked over charcoal until the rice develops a crisp crust, it’s finished with chicken, Chinese sausage and salted fish before being enjoyed with a cup of rich local kopi. The episode ends with Kuala Lumpur-style Hokkien mee, thick noodles stir-fried over high heat in dark soy sauce until they develop the smoky flavor known as wok hei, followed by freshly fried dumplings.
