Rinse the apricots well, which must be ripe and sweet. Then once cleaned we cut it into pieces, also discarding the internal stone, and put it in a container with the juice of 1 filtered lemon. After cutting the fruit, we check the precise weight to calculate the amount of water and sugar to add. If you prefer a juice with more pulp, then for every kg of fruit already cleaned, add 600ml of water. Instead, if you prefer a less dense juice, add a liter of water for every kg of fruit. As for the sugar, if the apricots are sweet and ripe, 150g of sugar will be enough, but you can reduce or increase the amount of sugar based on your tastes and needs. You could also eliminate the sugar altogether, but the juice will not keep for long. Put the necessary amount of water and sugar in a pan, place the pan on the stove and dissolve the sugar by bringing to a boil. When the sugar has dissolved and the syrup boils, add the apricots and continue cooking. We must wait for the water to boil again and calculate 10 minutes of cooking from this moment. At the end of cooking, blend the fruit to obtain a more fluid juice that we will pour while still boiling into previously sterilized bottles. Close with the cap and let cool until the vacuum forms. If we want to consume the juices soon, when they have become cold we store them in the fridge and consume them within a couple of months. Instead, if we want to preserve the juices for the whole winter and even for a year then we must proceed to sterilize the bottles. We take the bottles and put them in a large pot, they can also be laid out as long as they are wrapped in a cloth to prevent them from breaking due to the continuous impacts during cooking. We fill the pot with water and bring to the stove. From the boil we calculate 30 minutes of cooking. Then we turn off the heat and let the bottles cool in the pot.
