🥟 GERÇEK HATAY USULÜ ETLİ KOMBE 📝 Hamur Malzemeleri / Dough Ingredients 1 su bardağı su – 1 cup water 1 çay bardağı zeytinyağı – ½ cup olive oil (tea glass measurement) 1 tatlı kaşığı tuz – 1 teaspoon salt 2 yemek kaşığı yoğurt – 2 tablespoons yogurt 4–5 su bardağı un – 4–5 cups flour ⸻ 📝 İç Harcı / Filling 3 orta boy kırmızı soğan – 3 medium red onions 400 gram kıyma – 400 grams ground beef Tuz – Salt Karabiber – Black pepper Az kimyon – A pinch of cumin ⸻ 📝 Ara Katlar İçin / For Layering Yarım su bardağı zeytinyağı – ½ cup olive oil 👩🏻🍳 Yapılışı / Instructions Önce sıvı malzemeleri karıştırın, ardından unu ekleyerek yumuşak bir hamur yoğurun. First, mix the liquid ingredients, then gradually add the flour and knead into a soft dough. Hamuru 8 eşit bezeye bölüp dinlendirin. Divide the dough into 8 equal pieces and let them rest. Soğanları ince doğrayın, tuz ve baharatlarla yumuşatın. Finely chop the onions and soften them with salt and spices. Kıymayı ekleyip karıştırın. Add the ground beef and mix well. Bezeleri tek tek açın. Roll out each dough piece one by one. Tepsiyi yağlayın ve ilk üç katın arasına zeytinyağı sürerek yerleştirin. Grease the tray and place the first three layers, brushing olive oil between each layer. Üçüncü katın üzerine iç harcın yarısını yayın. After the third layer, spread half of the filling. İki kat daha açıp yağlayın, kalan iç harcı ekleyin. Add two more layers, brushing with oil, then spread the remaining filling. Son üç katı da aralarına yağ sürerek kapatın. Finish with the last three layers, brushing oil between each one. Üzerine yoğurt ve zeytinyağı karışımı sürün. Mix yogurt with olive oil and spread on top. Dilimleyin ve 180°C = 356°F. fırında üzeri kızarana kadar pişirin. Slice and bake at 180°C = 356°F. until golden brown.
