Keto Bread with Flaxseeds | Gluten Free, Vegan, Eggless This easy keto bread is 100% gluten-free, vegan, low-carb, sugar-free, oil-free, yeast-free, egg-free, and dairy-free! For best results, I highly recommend using the metric/gram measurements, rather than the standard/cup measurements. *1cup=240ml, 1Tbsp=15ml *No Substitution Unless Specified. INGREDIENTS (for 21 x 11 x 7cm loaf pan) DRY • 260 g (approx. 2cups) golden flaxseed (linseed) meal • 1 Tbsp baking powder • 1 tsp baking soda • 1/2 tsp sea salt WET • 1 cup (240 ml) warm or hot water • 1 tsp apple cider vinegar *You can use a brown flaxseed meal, but the bread turns out much darker, and the smell and flavour are stronger. So, I definitely recommend using a golden flaxseed meal. *Use home-ground flax seeds: Pre-ground flaxseed meals won’t work since the meals from some brands are defatted. INSTRUCTIONS 1. Grind the flaxseeds into fine flour. Ideally, sift it. 2. Combine all the dry ingredients. 3. Add the wet ingredients and mix until it becomes a dough. 4. Shape the dough into a loaf. Smooth out the surface with damp hands. 5. Place dough in a loaf pan with parchment paper. 6. Sprinkle with your preferred seeds. (optional) 7. Bake at 180C/356F for 60 -70 mins or until a skewer comes out clean. 8. Let it cool in the pan for 20-30 mins. 9. Let it cool completely on a wire lack before slicing. 10. You can store at room temperature for a few days. Store in the fridge for up to 5 days or freeze for up to months. #vegan #glutenfree #keto
