Panda Bakery: Lemon cookies with lemon icing
Hello, everyone. My name is NewFlowerGirl, but you can call me Demi. Today's video is me and my sister baking some lemon cookies. They are the perfect sweet/sour balance ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ The recipe: Ingredients For the Cookies: 2 1/2 cups all-purpose flour 1/2 tsp baking soda 1/2 tsp salt 1/2 cup unsalted butter, softened 1 cup granulated sugar 1 large egg, room temperature 1/2 cup sour cream (or full-fat Greek yogurt) 1 tbsp fresh lemon zest 1 tbsp fresh lemon juice For the Lemon Icing: 1 1/2 cups powdered sugar 2 to 3 tbsp fresh lemon juice 1 tsp fresh lemon zest (optional, for garnish) 1. Cream and build wet base 5 min In a large bowl, beat the softened butter and granulated sugar until pale and fluffy. Add the egg, sour cream, lemon juice, and lemon zest. Beat until completely smooth 2. Fold in dry ingredients 2 min In a separate bowl, whisk the flour, baking soda, and salt. Slowly add this to the wet ingredients, mixing just until the flour disappears. Overmixing will make the cookies tough instead of soft 3. Chill the dough 30 min Pop the dough into the fridge for about 30 minutes. This makes the sticky dough easier to handle and keeps the cookies plump when baking 4. Bake and cool 10-12 min Preheat your oven to 170°C (325°F). Scoop 2-tablespoon balls onto a parchment-lined baking sheet and flatten the tops just a tiny bit. Bake for 10 to 12 minutes. They should look pale and soft—don't let the tops brown! Let them cool completely 5. Whisk the glaze 3 min In a small bowl, whisk together the powdered sugar and 2 tablespoons of lemon juice. It should be thick but pourable, like warm honey. If it's too thick, add a few more drops of lemon juice 6. Ice the cookies 5 min Spoon a dollop of icing onto the center of each cooled cookie, using the back of the spoon to gently nudge it toward the edges. Top with a pinch of fresh lemon zest if you like. Let the icing set for 15 minutes before serving The Golden Rule of Icing: Never rush the cooling process.
