Momma Bates Easy Fried Chicken Recipe | Fried Chicken Tested 3 Ways

My mom came over to cook with me again, and these episodes are always so special to me. Today we made crispy fried chicken tenders, and not just any fried chicken, but the exact recipe I grew up on. We tested them three different ways: deep fried, pan fried, and air fried… and there was a CLEAR WINNER! This is the kind of simple food that tastes like home. The kind of southern cooking people dream about. Easy enough to make for 20 people, yet so good you will choose it over eating out every time. I am sharing both my mom’s original recipe and an elevated version with more seasoning and flavor if you have a little extra time. Mom’s Classic Fried Chicken: Dry Mix • 1 ½ cups self-rising flour • 2 teaspoons salt • 1 teaspoon black pepper Wet Mix • 1 cup all-purpose flour • 1 cup buttermilk • ½ cup whole milk • 1 ½ teaspoons salt • 1 teaspoon black pepper Method 1. Pat chicken dry and season lightly with salt and pepper. 2. Dredge chicken: dry mix → wet mix → dry mix. 3. Fry at 350–365°F until golden and chicken reaches 165°F internal temperature. 4. Rest on a wire rack before serving. ………. Elevated Southern Fried Chicken: Dry Mix • 1 ½ cups self-rising flour • 2 teaspoons kosher salt • 1 teaspoon black pepper • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 ½ teaspoons paprika (use half smoked paprika for depth if desired) • ½ teaspoon dried oregano • ½ teaspoon cayenne pepper (optional) Wet Mix • 1 cup all-purpose flour • 1 3/4 cup buttermilk • ½ cup whole milk • 1 ½ teaspoons salt • 1 teaspoon black pepper • ½ teaspoon paprika Method 1. Pat chicken dry and season with salt and pepper. 2. Dredge chicken: dry mix → wet mix → dry mix, pressing flour in for a craggy crust. 3. Fry at 350°F until deeply golden and chicken reaches 165°F internal temperature. 4. Rest on a wire rack before serving.
