Milk thistle (Silybum marianum) is a biennial herbaceous plant belonging to the Asteraceae family. This wild vegetable is commonly found throughout the Mediterranean region, from sea level to submontane zones up to 1,000 meters above sea level. It is rarer in northern Italy, but more common in central and southern Italy and the islands. Milk thistle grows among ruins, along roads, along the edges of ditches, and in uncultivated land. Vigorous in growth, it forms a basal rosette of leaves in the first year, and in the second year, a flowering scape, typically about 1.50 m tall. The entire plant is hairless and thorny. The root is a taproot, capable of naturally loosening compacted soil. The green leaves with white streaks (marbled) have wavy edges and are tipped with thorns; they can reach 40 cm in length. The inflorescences consist of clusters of purple flowers. The fruits are achenes, with a pappus, which ripen in midsummer and are dispersed by the wind. Milk thistle is a medicinal plant used to treat liver diseases. Due to its properties, it is also used as an ingredient in herbal liqueurs. It contains silibinin, reduces transaminases and other biochemical markers in the course of liver disease, and also appears to be beneficial for hepatorenal syndrome. It is a vegetable that nature offers us for free, without the need for a garden! Milk thistle is often considered a weed among vegetable crops. It is highly prized in the kitchen, especially during the Christmas season.
