Chocolate Trio Buttermilk Substitute or Acidified Milk Ingredients 330 ml Milk 3 tbsp (30 ml) Lemon Juice Step by Step 1. Place the milk in a bowl and add the lemon juice. 2. Mix with a wire whisk. Sponge Cakes Ingredients 350g unsalted butter 330g white sugar 3 eggs 1 tsp vanilla essence 450g 0000 flour (or the finest, self-rising flour you can find) 1 1/2 tsp baking powder 1/2 tsp salt 360ml buttermilk 130g white chocolate couverture 130g milk chocolate couverture 130g semisweet chocolate couverture Step by Step 1. Prepare three 20cm diameter springform pans or springform pans with parchment paper on the bottom. Weigh the ingredients. 2. Preheat the oven to 170°C. 3. Place the softened butter and white sugar in a bowl and beat with an electric mixer until well combined and creamy. 4. Add the eggs, beating after each addition. 5. Add the vanilla extract and beat. 6. Sift the dry ingredients (flour, baking powder, and salt) into a bowl. 7. Stir the dry ingredients and buttermilk into the previous mixture, alternating them and mixing. 8. Divide the mixture into three equal parts (if you can weigh the mixture to ensure equal parts, evenly! I divided it into three parts, approximately 530g each). 9. Add the melted white chocolate coating to one part of the mixture and mix. 10. Place in a pan. 11. Repeat steps 9 and 10 with the milk chocolate coating and the semisweet chocolate coating. 12. Bake the cakes for 35 minutes, or until a toothpick inserted into them comes out clean. 13. Let cool to room temperature and then refrigerate. Cream Cheese Filling Ingredients 220 g Butter/Unsalted Butter 220 g Powdered Sugar or Icing Sugar 1 tsp Vanilla Essence 450 g Cream Cheese 125 g White Chocolate Coating 100 g Milk Chocolate Coating 80 g Semi-Sweet Chocolate Coating Step by Step 1. Place the softened butter in a bowl and beat with an electric mixer until creamy. 2. Add the sifted powdered sugar and fold in with a rubber spatula. 3. Add the vanilla essence and beat with an electric mixer. 4. Add the cream cheese and mix. 5. Divide the filling into three parts. 6. Add the melted white chocolate coating to one part of the filling and mix. 7. Repeat the previous step with the other parts of the filling and the milk chocolate and semisweet chocolate.
