Detailed Recipe Ingredients For the Meat: 1 kg mutton (bone-in), 1 cup yogurt, 2 tbsp ginger-garlic paste, 1 tbsp red chili powder, 1 tsp turmeric, 2 tbsp biryani masala, salt to taste. For the Rice: 750g long-grain Basmati rice (soaked for 30 mins), 3 liters water, 2 tbsp salt, 1 tsp cumin seeds, 2-3 bay leaves, 4-5 cloves. The Masala Base: 3 large onions (thinly sliced), 3 tomatoes (chopped), 4-5 green chilies, 1/2 cup oil/ghee, 3-4 large potatoes (peeled and halved), fresh mint and coriander leaves. Garnish: Lemon slices, fresh mint, fried onions. Instructions 1 Marinate the Mutton: Mix the mutton with yogurt, ginger-garlic paste, red chili powder, turmeric, salt, and biryani masala. Let it marinate for at least 1 hour. 2 Prepare the Masala: Heat oil in a heavy-bottomed pot. Fry the onions until golden brown. Remove half for garnish. Add the marinated mutton and cook on high heat for 5-7 minutes. Add tomatoes and potatoes, cover, and cook until the meat is tender and the oil separates. 3 Boil the Rice: In a separate large pot, boil water with salt, cumin, bay leaves, and cloves. Add the soaked rice and cook until 70% done (the grain should still have a slight bite). Drain the water. 4 Layering (Dum): Spread the rice over the mutton masala layer. Sprinkle with the reserved fried onions, fresh mint, coriander, and a few lemon slices. 5 The Final Touch: Cover the pot tightly (use a cloth under the lid) and cook on very low heat (dum) for 15-20 minutes. 6 Serve: Gently mix the layers before serving to ensure every plate gets the perfect balance of aromatic rice, tender mutton, and flavorful potatoes
