I love going to traditional Valencian restaurants for hearty stews. It's a welcome break from the typical Italian restaurant, the typical Japanese buffet, or even the usual Spanish tapas. The kind of cooking that takes hours on the stove, the slow cooking, adding each ingredient to the broth at the right time, over low heat and with a thick sauce—that never fails. Cocido is a typical stew throughout Spain, with variations depending on the region. It usually has common elements, such as the compango (meat and vegetables) served separately from the noodle or rice soup. The typical Cantabrian cocido montañés is served by mixing and boiling the compango with beans and pork; the result is simply wonderful. And at La Tierruca, this cocido montañés menu is unlimited; there's no end to it. You can eat as many portions as you like. LA TIERRUCA C/ de Salamanca, 42, Valencia.
