Oma’s Gevulde Speculaas, The Most Delicious Dutch Spice Cookie Filled with Almond Paste #dutch
Hello all! Today my dear husband bakes Oma’s Gevulde Speculaas from an heirloom recipe which has been in his family for generations (Oma is grandmother in Dutch). Gevulde Speculaas is a Dutch spice cookie filled with almond paste. It is normally baked around 5th of December to celebrate Sinterklaas Day. Sinterklaas or Sint Nicolaas is patron saint of children, who rides on a white horse and comes from Spain by a steamboat, bringing spice, almond, chocolate, and orange for children. Sinterklass is assisted by Zwarte Piet who carries a big sack full of gifts for good children. Every year we start our winter celebrations with the Arrival of Sinterklaas, we bake Gevulde Speculaas and preparation of this scrumptious cake puts us in a festive mood while it is cold and damp outside. For more photos and daily news find me on Instagram; / paris_little_life _______________ *THIS VIDEO IS NOT SPONSORED! * Both Dutch nursery rhymes are credited to Mama Lisa’s World website: https://www.mamalisa.com/?t=ec&c=139 Who is Sinterklass and Zwarte Piet: https://en.wikipedia.org/wiki/Sinterk... _______________ Recipes: Speculaas spice mix: To make 45 gr of Speculaas spice, mix all the bellow ingredients: • 8 tsp Cinnamon powder • 2 tsp Ground clove • 2 tsp Ground nutmeg • 1 tsp Ground coriander • 1 tsp Ground aniseed • 1 tsp Ground white pepper • 1 tsp Ginger powder • ¾ Ground cardamom Oma’s Gevulde Speculaas: Ingredients: For the cookie dough • 300 gr Plain flour • 175 gr Soft butter • 150 gr Brown sugar • 15 gr Speculaas spice mix • ½ tsp Salt • 3 tsp Baking powder For the almond paste • 150 gr Peeled almond • 1 Small egg • Zest of half a lemon • 1 tsp Lemon juice • 1 tsp Almond essence Combine all the cookie ingredients and mix until smooth dough is formed. Wrap well in clingfilm and let it rest overnight. Now make the almond paste by soaking the almond in hot water for few hours. Peel the almonds, add sugar, lemon zest and lemon juice and blend in the food processor until the mixture resembles sand. Add one egg and almond essence and blend until the paste is combined and forms a paste with a course texture. To assemble, split the dough into 2 parts and roll out until it is 1 cm thick. Transfer one sheet of rolled out cookie to a well-greased tin. Add all the almond paste and spread it to all corners. Cover with the second sheet of cookie dough. Brush with an egg and decorate with peeled almonds. Bake in 175c preheated oven for 40-45 minutes until top of the cake turn golden brown. Let it cool down in the tin before cutting.
