Back in the spring of 1975, a guy named Larry Lavine took an old converted post office at the corner of Greenville and Meadow Road and turned it into a little burger joint called Chili's. Drab green paint, off white trim, low ceilings, and a menu with only a handful of burgers. The whole dream was simple. Just make a hundred bucks a day. Look at that lot. Wood power poles humming in the Texas sun, a motorcycle idling at the crossing, station wagons and that big cream Oldsmobile Cutlass rolling by while the parking spaces fill up for the lunch rush. This was the neighborhood spot, the kind of place where folks knew the cook and the burger came on a real bun with chili, cheese, and sauteed onions piled on top. No apps, no drive thru screens, just a screen door, cold drinks, and good company. Nobody standing in that lot knew they were looking at the birthplace of something huge. That one little Dallas burger stand grew into a name you would see in every town in America. But this, right here, was the original. The heart of it all, parked between the power lines and the wide open Texas sky. If you drive down Greenville Avenue today, that moment is gone. The city widened the road right through the old kitchen, so the original was replaced by a bigger building in 1981. That restaurant later closed, and the whole thing was torn down in 2012.
