What We Did This Week: Cosy Greenhouse Styling, Garden Projects, a trip to Broadway & Fresh Baking 🍪

I’m Cat, and I’m so glad you’ve found your way to our corner of the countryside. ✨In this week's Vlog, I show you some of the new blooms in the garden, I take a little trip to Broadway in the Cotswolds and visit one of my favourite shops, we go for a little tipple in one of our local pubs, we tackle some jobs in the garden, we go for pizza at RH England, I finally finish my greenhouse styling and I bake some Anzac biscuits - they were delicious! 🌸 *Rocket & Be ✨ Shop My Collection: https://rocketandbe.com ✨Instagram - rocketandbe.com1 📸 Follow our weekly life on Instagram: rocketandbeathome *Anzac Biscuits 100g (approx. 1 cup) rolled oats 150g (1 cup + 1 tbsp) plain flour 85g (1 cup) desiccated coconut 100g (½ cup packed) soft light brown sugar 125g unsalted butter 2 tbsp golden syrup 1 tsp bicarbonate of soda (baking soda) 1 tbsp boiling water 50g (¼ cup) raisins Method -Prep the Oven: Preheat your oven to 180°C (160°C Fan / Gas Mark 4). Line two large baking trays with baking parchment. -Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, plain flour, desiccated coconut, brown sugar, and raisins. -Melt the Wet Ingredients: In a small saucepan, gently melt the butter and golden syrup together over a low heat until smooth and liquid. -Mix and React: Remove the pan from the heat. In a small cup, mix the bicarbonate of soda with the boiling water, then stir this into the hot melted butter mixture (it will froth up). -Combine: Pour the frothy butter mixture into your dry ingredients and stir thoroughly until everything is well combined and sticky. -Shape: Roll heaped dessertspoons of the mixture into balls and place them on the baking trays, leaving about 3cm between each to allow them to spread. Gently press them down with the back of a fork. -Bake: Bake for 10–15 minutes until they are a beautiful golden brown. -Cool: Leave them on the tray for 5 minutes to firm up slightly, then transfer them to a wire rack to cool completely so they crisp up. ...
