Braided Syrian Cheese

Today we are making braided syrian cheese (aka jibneh mshallaleh or جبنة مشللة) with Sito Emily. She makes a big batch of this cheese every winter and gives it to each of her four children for Christmas. Hope you enjoy! (❁´◡`❁) ❀ Ingredients ❀ 5 lb. block of whole milk cheese (raw curd mozzarella) 3 cups of salt 2 tsp. Black caraway seeds 10 cups of water 1 tsp. Mahlab (powdered) ✩ Instructions ✩ Mix spices together and put aside. Slice cheese into small cubes and put aside. Fill 10 quart pot or bowl with cold water. Add salt and mix until salt is dissolved, preparing brine for cheese, and put aside. Microwave cheese until it has melted together and your spoon presses down easily into the cheese. Lift melted cheese onto a bowl or tray, add a pinch of spices, and shape together into a ball. Press your thumb into the center, like the shape of a big doughnut and stretch and pull gently, twisting into a rope-like shape and loop together. Tuck one end into the other and put into salt water brine. Leave for three hours until cheese absorbs the salt. Drain and place in plastic wrap, then freeze.
