Making home-made coconut oil is not so easy as it taste! | Traditional Me

The coconut tree is a tree that is not only wide-spread in our island nation, but something that is intricately woven within our culture & cuisine. The Sri Lankans of old called it 'Kapruka' which is a tree of legend that is said to give you whatever you wished. The coconut tree is given such a high honor because each part of the coconut tree can be used for something or the other, making the tree one of the most useful trees to grow. It has been tradition to make coconut milk by heating up dried coconuts. This 'milk' can be used to cook food and to mix with different herbal medications to put in your hair. This distilling process used to be a very common site in Sri Lanka, with an entire day being utilized to distill the oil from 20 to 25 coconuts. When the coconut milk heats up and the oil starts floating on the top, the condensed pieces of coconut milk is called "kirijja" and is also known as "kiri Kanda" in some parts of the country. This "kiri kanda" can be separated easily by using a coconut shell. Kiri kanda is absolutely delicious and is often mixed with rice porridge to enhance the taste. The surest sign of the distillation process of coconut oil is that the whole concoction stops bubbling. The oil is left to cool and is put in glass bottles and this natural process leaves the coconut oil more fragrant and healthy, when compared with machine made oils. Using this oil to cook food gives your dishes a deliciousness that cannot be gotten otherwise. The leftover sediment from the oil distillation process is known as 'thelka' or 'kadukkan'. While children love to eat these because they are very sweet, adults don't let them as they are high in protein and causes digestion issues. Herbal ingredients are added to partially distilled oil, which gets fully distilled to make hair oil. By using this hair oil daily, hair becomes more luxurious and healthy, while accenting colors. The use of this hair oil was so prevalent in Sri Lanka, it has become one of the major traditions of the Sri Lankan New Year where 20 million people use hair oil together at the auspicious time.
