Mid-July is the time to harvest some bulbous vegetables: shallots, onions grown from spring onions, and garlic. In my garden, I'm harvesting winter garlic (Harnaś variety) and shallots. The signal to harvest bulbs and shallots is when their stalks break. Once most of the green shoots have fallen down, we begin pulling them out. Don't rush the bulb harvest, as the last few days before the stalks break are the time of the fastest bulb growth. It's important to give the plant time to transmit its vital energy from the dying green parts to the bulbs. Don't overly delay digging up the bulbs. In the case of garlic, harvesting too late results in loose heads and separating cloves. Such garlic won't store well over the winter. Harvesting too late can cause rot, especially in wet summers. Harvested onions and garlic can be left in the bed to dry for a few days or stored immediately in a well-ventilated, sunny spot. Before moving them to the pantry, the bulbs need to dry thoroughly and bask in the sun so that the outer scales acquire the proper color for the variety. And then... childhood memories and braiding. After harvesting the bulbs, the bed shouldn't be left bare. It's important to consider what we'll grow after them. Lettuce, spinach, radishes, or turnips, or perhaps bok choy or Chinese cabbage – the choices are many. Let's be guided by our culinary preferences. Sowing green manure is also a very good solution, especially if we plan to grow vegetables with high nutritional requirements in the bed next year.
