It is a staple during the warmer months in Bengal and is typically enjoyed with a hot bowl of steamed rice and dal.IngredientsDrumsticks (Sojne Data): Cut into 2-3 inch long pieces and lightly peeled.Potatoes (Aloo): 2 medium, cut lengthwise into wedges.Poppy Seed Paste (Posto Bata): 2 tablespoons (ground into a smooth paste with a little water).Green Chilies: 4, slit lengthwise.Dry Red Chili: 1.Nigella Seeds (Kalo Jeere/Kalonji): $\frac{1}{2}$ teaspoon.Mustard Oil: 3 tablespoons.Turmeric Powder: A pinch.Salt: To taste (approx. $\frac{1}{2}$ teaspoon).Sugar: $\frac{1}{2}$ teaspoon.Water: 1 small bowl.ProcedureTempering: Heat 3 tablespoons of mustard oil in a pan or kadhai over medium heat. Add one dry red chili and $\frac{1}{2}$ teaspoon of nigella seeds (kalo jeere). Let them splutter.Frying the Potatoes: Add the lengthwise-cut potato wedges to the pan. Fry them on medium flame until they start turning golden-brown.Adding Drumsticks: Once the potatoes are lightly browned, add the drumstick pieces to the pan. Stir and mix everything well.Seasoning: Add salt (to taste) and a pinch of turmeric powder. Stir well to coat the vegetables and saute for another minute.Incorporating Poppy Seed Paste: Pour in the 2 tablespoons of ground poppy seed paste (posto bata). Saute the mixture continuously until the raw aroma of the poppy seeds disappears and oil begins to separate from the sides.Simmering: Add a bowl of water to the pan along with the slit green chilies. Mix well, cover the pan with a lid, and let it cook over medium-low heat for about 6–7 minutes.Checking and Finishing: Remove the lid and stir. If the drumsticks need more time to soften, cover and cook for a few more minutes until the vegetables are completely tender and the gravy reaches a semi-dry texture.Final Touch: Sprinkle $\frac{1}{2}$ teaspoon of sugar over the dish (a vital addition to balance the flavor of posto), give it a final mix, and turn off the heat.
