Hi everyone! 💕 Welcome back to another Day in My Life (DIML) vlog! 🌸 In today’s vlog, I’m sharing a few special moments from my day: ✨ Talking about the skin problem I’ve been facing and the treatment I’m currently taking. 🫐 Baking a delicious Blueberry Lemon Cake. 🎉 Planning a sweet birthday surprise for Reenu and celebrating together. Life isn’t always perfect, and I wanted to share both the happy moments and the challenges with you. I hope you enjoy spending the day with us! 💖 And here is the recipe 🍋🫐 Blueberry Lemon Cake Ingredients For the cake: 2 cups (250 g) all-purpose flour 2 tsp baking powder ¼ tsp salt ½ cup (115 g) unsalted butter, softened 1 cup (200 g) sugar 2 large eggs 1 tsp vanilla extract Zest of 2 lemons 2 tbsp fresh lemon juice ½ cup (120 ml) milk 1½ cups fresh blueberries (or frozen, do not thaw) 1 tbsp flour (to coat blueberries) Lemon Glaze (Optional) 1 cup powdered sugar 2–3 tbsp fresh lemon juice ½ tsp lemon zest Method 1. Preheat the oven to 180°C (350°F). Grease and line an 8-inch round cake pan. 2. In a bowl, whisk together: Flour Baking powder Salt 3. In another bowl, beat the butter and sugar until light and fluffy (3–4 minutes). 4. Add eggs one at a time, beating well after each addition. 5. Mix in: Vanilla extract Lemon zest Lemon juice 6. Add the dry ingredients and milk alternately: Dry ingredients Milk Dry ingredients Mix just until combined. 7. Toss the blueberries with 1 tbsp flour and gently fold them into the batter. 8. Pour into the prepared pan and bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean. 9. Let the cake cool completely. 10. For the glaze, mix powdered sugar with lemon juice until smooth and drizzle over the cooled cake. Garnish with extra blueberries and lemon zest. Tips Coating the blueberries in flour helps prevent them from sinking. Don’t overmix the batter—this keeps the cake soft and fluffy. The cake tastes even better the next day after the lemon flavor develops.
